Does the taste of coffee change over time?

Have you ever had the feeling that when you drink coffee, at first it tastes the same, but after a while it changes .I had this experience. When I made the cup, I felt a little bitter at the first sip, then I put down the cup. When it was cold ,drink it again, I suddenly felt a lively acidity.This change have sevral reasons.

This is similar to the way I mentioned before, coffee is cold and drunk.So why had such a difference at different temperatures?

In fact, there is a scientific basis . The sour, bitter and sweet taste we can experience is different at different temperatures.When the temperature is low, bitterness and sweetness will be reduced and the perception of acidity will be increased.So, when I drink that cool cup of coffee, I get a lively acidity, which is usually at first acidity.

Despite the differences in how it is made, cold brew maintains all of the standard benefits of regular coffee.
